France is among the world’s smaller producers and the seventh-largest olive oil consumer. Over the past five years, the country has poured out anywhere from 100,000 to 140,000 tons of olive oil annually. Production is concentrated in the southeast of France, mostly Provence, and the Mediterranean island of Corsica. However, efforts are underway to dramatically increase production, with new initiatives that could increase annual production to 30,000 tons in the next few decades. Farmers in France continue to dedicate themselves to traditional olive varieties, especially Aglandau, Bouteillan, Ghjermana di Casinca (in Corsica), Grosanne, Picholine and Salonenque.
