Commercial olive oil production in Israel is a relatively recent development. Around 81,000 acres yield roughly 16,000 tons of olive oil annually. Israel uses most of its olive oil domestically, with some exported mainly to the United States. Native olive varieties Souri and Nabali offer flavors integral to the traditional cuisine.
